Fermentation can elevate food industry side streams from waste to resource. Get a clear overview of methods, safety, and first steps so your company can get started and create new products on a solid foundation.

About the webinar

This webinar provides a practical overview of fermentation as a driver for upcycling in the food sector. You will gain clarity on core concepts, the most commonly used processes, and examples from companies that have already turned surplus raw materials into market-ready solutions. Participants will be engaged through short exercises and polls, and we conclude with a Q&A. The main language of the webinar is Danish, but some presentations may be in English. Held as part of the Food Upcycling project supported by the Danish Industry Foundation.

Purpose

The purpose is to give participants a solid starting point for assessing whether fermentation is the right path for their side streams and how to get started. We introduce key microorganisms, typical process choices, and basic reactor types, highlight food safety, quality, and regulatory considerations, and share concrete cases to inspire the next steps in your company.
